corn & crab chowder with basil corn bread
Saturday, October 1, 2011 at 04:42PM Cornbread: what a production this was... It all started with the lack of a food processor. Usually a blender does the trick but making a "coarse cornmeal" without the proper tool was a slight disaster... and, of course, funny because when things go wrong in the kitchen, you sort of have to laugh.
The chowder, on the other hand, is a simple dish to make and something I'd definitely recommend with a fall salad and some sort of bread to clean the bowl :)


Ingredients:
1 bunch green onion, chopped
2 stalks celery, finely chopped
1 can yellow corn
1/2 lb. crab meat
2 tbsp. bacon drippings
1/2 c. chicken stock
2 tsp. chopped garlic
1 tsp. black pepper
1/2 tsp. red pepper (or to taste)
1 tbsp. parsley
1 tsp. celery seed
2 bay leaf
1/2 stick butter
1 pt. milk
In bacon drippings, saute onion, celery and garlic until brown. Add stock, butter, crab meat, corn, herbs and spices and bring to boil. Simmer 10 minutes. Add milk. Bring almost to boil. Serve with oyster crackers or dark bread.
