st. patty's day lemon glaze cookies

My good friend Jen, who is studying abroad in England, sent me a message on Facebook asking what yummy treats I was making for St. Patrick's Day. The second I saw her post, I knew I had to do something about it... Thinking of those who gave up chocolate for Lent, I thought to go with a Lemon Glaze Cookie from the Martha Stewart website. It is light, refreshing and PERFECT for a beautiful day like today.

Lemon zest is key in these goodies! A friend said, "This has the perfect hint of lemon." That's what I like to hear. Happy St. Patty's Day!

chocolate chunk cherry cookies

 

 

 

 

 

 

 

 

 

 

 

1/4 cup shortening

1/3 cup packed brown sugar

1/3 cup packed brown sugar
1/3 cup granulated sugar
1/2 teaspoon baking soda
1 egg
2 tablespoons unsweetened cocoa powder
1 teaspoon vanilla
2/3 flour
2/3 rolled oats
1/4 cup flaxseed meal
4 ounces dark chocolate, chopped
2 ounces white baking chocolate, chopped
1/2 cup dried tart cherries, coarsely chopped
Preheat oven to 350 F. In a large bowl, beat shortening with an electric mixer on medium to high speed 30 seconds. Add brown sugar, granulated sugar, baking soda, and 1/8 teaspoon salt. Beat until well mixed. Beat in egg, cocoa powder, and vanilla until combined. Beat in flour. Using a spoon stir in chocolates and cherries.
Roll the dough into 1 to 1 1/2 inch balls!
Bake for 10 minutes or until you think they're done.
