This was a nice change from the typical oatmeal pancake or whatever I have for lunch everyday... I had it for dinner the night before too but couldn't resist trying it again. I love salmon all types of ways. This was simple. Pan-seared with natural sea salt and pepper. After a minute or two on one side I added a few generous cups of spinach with a pinch of garlic salt.
The tiny bit of sauce you see is simply soy-sauce and honey. A perfect and healthy lunch made in less than ten minutes. Sorry Kristin for forcing you to try salmon yet again... It wasn't that bad was it?
